Here’s the thing. Every once in a while, all we need is a delicious, finger-licking-good, juicy burger. I’m not just talking about the quality of the patty itself— not down playing it either— but the entire burger. From the temperature it’s cooked (I personally prefer medium) to the type of beef used (in this case it’s American style Kobe beef), to the bun, and finally all the dressings that come along with it. You are in luck fellow Bellevue residents, I have found that burger at Lunchbox Laboratory!
Using organic buns, they have created some pretty exciting menu options to fill them. Most unique to Lunchbox Laboratory is the “Dork.” With a duck and pork combination patty, ground in-house, you’ll find yourself enjoying a blend of herbs and spices similar to a deliciously salted breakfast sausage. Topped with some of their homemade BBQ sauce and you’ve got yourself a winner. Or, my personal favorite
and currently a seasonal option, the Psychedelectable. This American style Kobe beef patty is covered with caramelized onions, sautéed mushrooms, melted swiss cheese and a special black garlic truffle mayo. The garlic was slow-roasted for two weeks!
What also caught my attention was the fact that Lunchbox Laboratory uses local ingredients like Snoqualmie Natural Ice Cream for their award-winning shakes. One shake to mention is their homage to the Boston Crème Donut. Hello sweet goodness! For those of you who want an extra kick to your shake, for an extra $3.25 they whip up “boozie shakes” with Kahlua, Baileys, Absolut Vanilla, Malibu Coconut, or Patron XO Café, just to name a few.
Since opening their doors to hungry Downtown Bellevue diners in 2012, Lunchbox Laboratory has continued to deliver gourmet shakes and burgers. The Eastside is now booming with even more restaurants, so it was important that Lunchbox Laboratory promoted the most unique aspects of the restaurant early on. Whether it meant having hand-crafted salts like habanero or bacon, or creating a one-of-a-kind ketchup by blending cayenne, roasted habanero and jalapeno mix and calling it Satin’s Tears. Lunchbox Laboratory is certainly taking the term “burger joint” to the next level.
Lunchbox Laboratory is open daily 11 a.m. to 11 p.m. for all your burger and shake needs. Happy Hour is available 3 p.m. to 6 p.m. and 9 p.m. to close every day where you can indulge in discounts on draft beer, wine, appetizers, and burgers. They are located on 989 112th Ave NE.
