Chef Jason Wilson has been making waves in the Downtown Bellevue community since his opening of The Lakehouse and Civility & Unrest. A fixture in the restaurant industry for over 30 years, Wilson's talent for cooking American Regional Food in the Pacific Northwest has earned him many awards and celebrity status in the culinary world as both an innovator in modern cooking and a leader in authentic, vibrant, craft cooking, locally and nationally. 

With such an introduction, how could you not want to see what all the hype is about? If you're a fan of great cocktails and mouthwatering food (who isn't?!), you need to check out Civility & Unrest's Social Hour. From 5 - 7 p.m. daily, Civility & Unrest presents the art of the craft cocktail and delicious foods at approachable prices. 

Want a taste of what to expect? How about a White Rabbit cocktail (made from four rouses bourbon, creme de cacao, banana and almond milk) or a New Kur (kur gin, Spanish vermouth, French vermouth, maraschino grapefruit)? The rotating Social Hour menu has included Dungeness Crab Lettuce Wraps (with chiles, mint and curry), Merguez Sausage (with spicy vegetable relish and apricot mustard) and Gruyere Cheese Puffs (with truffled chevre and chive). 

Highlights from the Social Hour Menu: 

  • 3 rotating cocktails, $8 each
  • All beer $2 off
  • Red and white wine, $7
  • ~10 rotating featured bites from chef-owner Jason Wilson, starting at $6

In Wilson's own words, "Civility & Unrest is all about being a whiskey bar and a cocktail lounge. It's about finding the space, discovering the amazing cocktails and immersing oneself in the culture of a classic cocktail lounge and bar. I love the richness that accompanies a good cocktail: great discussions, great laughs, meeting new people, bonding and sharing, and oftentimes letting loose, escaping and getting away."
